Frozen Açaí Pulp for Manufacturers and Food Service

Brazilian açaí pulp in 12% and 14% total solids, supplied frozen for sorbet, soft serve, bowls and industrial formulation. Composition is açaí and water — you decide the sugar, the guaraná and the texture.

You own the formulation

No added sugar, no guaraná, no stabilisers, no other fruit. Nutritional analysis shows 0 g of added sugars. Every gram of sweetener, gum or flavour in the finished product is your decision.

18-month shelf life at -18 °C

Blanched, depulped, optionally pasteurised, then frozen. Thaw under refrigeration and homogenise by mixing to restore the natural emulsion before use.

From 1 kg bags to 170 kg drums

Export standard is 1 kg bags. The line also runs 100 g, 1.02 kg and 5 kg packs, plus 170 kg bags for drum filling. Tertiary packaging is specified per order.

Documentation for your QA

Technical data sheet, COA where applicable, certificate of origin, export paperwork and the sanitary documents required for your lot and destination market.

Açaí pulp concentrations: 12% and 14%

Total solids is the number that decides how your finished product behaves. It is the percentage of açaí matter left once water is accounted for — the higher it is, the more colour, fat and flavour survive dilution.

12% total solids

Conventional
Composição
Açaí. Nothing else.
Energia
60 kcal / 100 g

Bowls, smoothies and beverage bases where a lighter body and a lower cost per kilo matter more than intensity.

14% total solids

Conventional or organic
Composição
Açaí (Euterpe oleracea) and water.
Energia
77 kcal / 100 g

Sorbet, soft serve and any formulation where sugar and water are added downstream — the higher solids carry colour and flavour through.

An unsweetened base — you control sugar, guaraná and stabilisers

Most açaí sold internationally arrives already formulated: sweetened, thickened, flavoured with guaraná, and locked to somebody else's recipe. That is a finished product wearing the label of an ingredient.

This is the opposite. The 12% grade lists one ingredient — açaí. The 14% grade lists two — açaí and water. Nutritional analysis returns 0 g of added sugars. Nothing is pre-decided, so your R&D team sets the sweetness curve, the overrun, the gum system and the guaraná level that your market expects.

Açaí pulp for sorbet and soft serve manufacturing

For frozen dessert production the 14% grade is usually the right starting point. Once you add sugar, water and a stabiliser system, total solids in the finished mix fall — starting higher means the açaí still reads as açaí in the cabinet, rather than as a pale purple ice.

The pulp arrives frozen and unpasteurised or pasteurised depending on your process requirements, and is thawed under refrigeration and homogenised before it enters the mix. If you would rather skip formulation entirely, we also supply a finished açaí sorbet in food-service formats.

Açaí pulp for bowl and juice bar operations

Operators building their own bowl base use the pulp to control cost per serving and to differentiate the recipe from every other shop buying the same pre-made mix. The 12% grade suits high-volume bowl and smoothie service; the 14% grade suits menus positioned on intensity and colour.

Organic and conventional

The 14% grade is produced in both natures. The organic version is certified for the Brazilian (BR), US (NOP) and European (EC) markets and holds its own MAPA registration, separate from the conventional line. Certification documents are issued per lot and destination — tell us the market and we send what your importer needs.

Cold chain: samples by air, volume by reefer

Frozen pulp has to stay frozen, and that single fact governs what a sensible first order looks like. Rather than quote one universal minimum, here is the structure we actually use.

Samples and pilot quantities

Air freight with thermal packaging and dry ice. Fast and reliable for validation, laboratory analysis and bench trials — but logistics dominate the cost per kilo at this scale, so it is a testing structure, not a supply structure.

Commercial volumes

Refrigerated ocean container. Minimum order is 1,000 kg FOB Brazil in standard 1 kg bags, and reefer economics become genuinely efficient from around 4 tonnes. CIF and CFR are quoted once the destination port is confirmed.

Tell us the destination port, the grade and the target volume, and we quote the structure that fits — including whether it is worth consolidating your first commercial order with another shipment.

Frequently asked questions

What açaí concentrations do you supply?

Two standard grades: 12% total solids (conventional) and 14% total solids, available conventional or organic. The 14% grade is the one most manufacturers choose for sorbet and soft serve, because the higher solids content carries flavour and colour through the added sugar and water of a finished formulation. Other concentrations can be evaluated on request.

Does the pulp contain sugar, guaraná or additives?

No. The 12% grade is 100% açaí. The 14% grade is açaí (Euterpe oleracea) and water. There is no added sugar, no guaraná, no preservatives, no stabilisers and no other fruit. Nutritional analysis confirms 0 g of added sugars. You control the entire formulation downstream.

Is organic açaí pulp available?

Yes. The 14% grade is produced in both conventional and organic versions. The organic version is certified for the Brazilian (BR), US (NOP) and European (EC) markets, and carries its own MAPA registration. Certification documents are issued per lot and destination market.

What is the shelf life and storage temperature?

18 months from the date of manufacture when stored at -18 °C or below. The product must be thawed under refrigeration and homogenised by mixing before use, which restores its natural emulsion.

What packaging formats are available?

The export standard is 1 kg bags. The production line also runs 100 g and 1.02 kg primary packs, 5 kg packs and 170 kg bags for drum filling. Secondary and tertiary packaging — raffia sacks, metal drums or customer-specified formats — is defined per order.

Qual é o pedido mínimo?

1,000 kg FOB Brazil for commercial orders in standard 1 kg bags. Sample and pilot quantities ship separately by air freight with thermal packaging and dry ice. Ocean freight in a refrigerated container becomes the efficient structure from roughly 4 tonnes.

Which incoterms do you work with?

The reference condition is FOB Brazil. CIF and CFR can be quoted once the destination port, volume and required temperature are confirmed, since refrigerated ocean freight is priced per route and container utilisation.

Do you provide technical documentation?

Yes — technical data sheet, certificate of analysis (COA) where applicable, certificate of origin, export documentation and the sanitary documents required for your product, lot and destination market.

Is the product non-GMO and allergen free?

The pulp is produced from raw material that is not genetically modified, and it is free of irradiation and ionisation. It contains no allergenic substances and no gluten, with preventive controls against cross-contamination in the plant.

Do you offer private label?

Yes. Private label is available subject to analysis of volume, packaging format and production lead time.
