Carrier-Free vs Maltodextrin Fruit Powder: What Buyers Should Know
Two fruit powders can carry the same name and the same price per kilogram and still contain very different amounts of fruit. The carrier is the reason.
Many fruit juices and purées are sugar-rich and acidic. Dried on their own in a spray dryer they tend to become sticky and absorb moisture, which makes a free-flowing powder hard to produce. Producers therefore often add a carrier, also called a drying aid, such as maltodextrin or gum arabic.
What a carrier changes
- Fruit content: the carrier takes a share of the powder, so a kilogram contains less fruit than a carrier-free kilogram.
- Label: the carrier is an ingredient and appears on the declaration. Its source can matter for allergen and dietary statements.
- Handling: carriers can improve flowability and reduce caking.
- Nutrition: carriers add carbohydrate to the panel.
- Cost per unit of fruit: a lower price per kilogram may mean a lower fruit share.
Where each approach is common
Spray-dried powders are more likely to use a carrier because of how the process works. Freeze-dried powders are often made without one, since the material is dried as frozen solids, but this depends on the supplier and the fruit. Do not assume it from the format; confirm per SKU.
How to specify
- State whether you require carrier-free, or accept a named carrier up to a maximum share.
- Ask for the carrier type, its percentage and the fruit content on the specification.
- Request the ingredient and allergen statement.
- Compare quotes on cost per kilogram of fruit solids, not cost per kilogram of powder.
When a carrier is acceptable
A carrier is not a defect. For flavor, color or fortification roles, a spray-dried powder with a declared carrier may be the right commercial choice. The point is to know what you are buying and to make sure the label matches the product.
