Ingredient selection criteria

Moisture sets the shelf life

Freeze-dried fruit is crisp when dry. Moisture from binders and fillings migrates into it and softens it over time. Manage water activity, layer design and barrier packaging.

Powder or inclusion

Powder blends evenly and carries color and flavor. Pieces deliver visible fruit but can break during mixing and handling. Pieces are evaluated on request.

Color bleed and baking

Pigments can bleed into a binder or fade under heat. Test the actual bake profile.

Particle size and stickiness

Fine powders can clump in syrups and binders. Pre-blend with dry ingredients to disperse them.
